I’m obsessed with my Crockpot. Ever since my mom got me one for Christmas, I try and use it as much as possible. It’s the easiest way to cook super dericious meals; you just throw in everything, turn it on, leave and do real life stuff for 8hrs, come back, and VOILA! A fully cooked, fall-off-the-bone dinner is ready and makes your house smell super great; seriously, whoever lives with you will be praising you for your cooking mastery, when you’ll snicker behind their back cause you know it was stupid easy.

Dun dun dun dun! My new copy of OMG that’s Paleo? That’s right, Juli Bauer of PaleOMG came out with a cookbook and it’s as amazing as her blog! She is best known for her exquisite paleo sweet treats, but all of the dinner dishes of her’s that I’ve tried have been awesome too.
This is the Slow-Cooked Salsa Chicken out of the “Poultry” section of OMG that’s Paleo and it is pretty much the easiest recipe ever (with literally 6 ingredients). Here goes!
1 whole chicken (that’s right, a whole giant chicken)
2 yellow onions, sliced
1 cup chicken broth (no sugar added)
3 garlic cloves, minced
1/3 cup salsa (pick your favorite kind, no sugar added)
salt and pepper to taste
Place the sliced onions, then the whole chicken in the slow cooker.
Then, pour in the chicken broth. Toss in the minced garlic and salsa, then add salt and pepper to taste.
Let it cook on low in the Crockpot for 6-8 hours.
When it’s all finished, use a fork to pull the chicken from the bone and pick some onions out of the bottom of the Crockpot. Pour the delicious sauce over and it will be amazing!
Ooooooh, onions. I do love thee. Watch out for bones in this one, since the meat is falling off the bone!
